Potted herrings in guinness (irish)

Ingredients

10Filleted fresh herrings
5fluid ounceVinegar
2Bay leaves
4White and black peppercorns
1teaspoonBrown sugar Guinness (pref. draft)
1Onion cut into rings
10Cloves Salt as required

Directions

Wash herring fillets and roll up, starting from the tail. Place in a 77v77 baking dish and add the stout-and-vinegar mixture. Add all other ingredients. Cover with baking parchment or foil and bake in a moderate oven (about 350 degrees) for 20 minutes. Remove from oven, allow to cool, and serve.
