½ cup | White vinegar |
1½ tablespoon | Sugar |
2 teaspoons | Pickling spice |

combine 2 sliced onions, herring, salt, pepper and water in a saucepan.
bring to a boil and cook over low heat for 25 minutes carefully remove the herring and place in a bowl or jar alternating in layers with the remaining 2 sliced onions.
mix the vinegar, pickling spice, sugar, and bay leaves with the fish stock.
