Pickling herrings

Ingredients

| 4 | Onions sliced | |
| 1½ | teaspoon | Salt |
| ¼ | teaspoon | Pepper |
| 2 | cups | Water |
| ½ | cup | White vinegar |
| 1½ | tablespoon | Sugar |
| 2 | teaspoons | Pickling spice |
| 2 | Bay leaves | |
Directions
combine 2 sliced onions, herring, salt, pepper and water in a saucepan.
bring to a boil and cook over low heat for 25 minutes carefully remove the herring and place in a bowl or jar alternating in layers with the remaining 2 sliced onions.
mix the vinegar, pickling spice, sugar, and bay leaves with the fish stock.
