Potato sauce (salsa de patatas)

Yield: 12 Servings

Measure Ingredient
2 mediums Potatoes; cooked and diced
2 \N Tomatoes; finely chopped
1 \N Pepper; finely chopped
2 \N Cloves garlic; finely chopped
1 \N Bay leaf
2 tablespoons Oil
2 cups Boiling water
1/16 teaspoon Salt

Saute potatoes, tomatoes, pepper, garlic, and bay leaf in oil until soft.

Add boiling water, cloves , and salt. Simmer for 5 minutes, stirring well.

Strain through fine sieve or cheesecloth. Reheat, skim and serve. yield: Lei Gui, Bronx, NY, USA
