Patatas bravas (spicy potato)

Measure Ingredient
2 \N Dried red chillies
400 grams Potatoes; sliced into large
\N \N ; wedges, skins-on
1 \N Spanish onion; peeled and diced
6 \N Cloves garlic
1 teaspoon Cumin seeds
4 fluid ounce Olive oil

Pound the ingredients in a pestle and mortar or electric processor until a smooth paste and spread it on the potato wedges.

Bake in a hot oven (200C/400F/gas 6) for 45 minutes until the centre of the potato wedges are done but not crumbly and falling apart.
