400gramsPotatoes; sliced into large
; wedges, skins-on
1Spanish onion; peeled and diced
6Cloves garlic
1teaspoonCumin seeds
4fluid ounceOlive oil

Directions

Pound the ingredients in a pestle and mortar or electric processor until a smooth paste and spread it on the potato wedges.

Bake in a hot oven (200C/400F/gas 6) for 45 minutes until the centre of the potato wedges are done but not crumbly and falling apart.
