Pork loaf with applesauce glaze

| 1 | medium | Onion; finely chopped |
| 1 | cup | Bread crumbs; fresh |
| 1½ | cup | Chunky applesauce |
| 1 | Egg | |
| 1 | teaspoon | Sage |
| ¾ | teaspoon | Salt |
| ¼ | teaspoon | Pepper |
| ⅛ | teaspoon | Allspice |
| 1 | pounds | Ground pork |
| 1 | teaspoon | Dijon mustard |
Directions
Directions: Preheat oven to 375F In a small skillet, heat oil until hot. Add onion and cook over medium heat, stirring often, until lightly browned, about 4 minutes.
In a medium bowl, combine bread crumbs, 1 c applesauce, egg, sage, salt, pepper and allspice. Stir with a fork until mixed. Add ground pork and onions and mix until blended. Pack mixture into a 8x4x2½ inch loaf pan.
In a small bowl, stir together remaining ½ c applesauce and mustard.
Spread applesauce mixture over top of loaf and cover pan with aluminum foil. Place on a baking sheet and bake for 30 minutes. Remove foil and continue baking until meat thermometer inserted in center of loaf reads 160-165F, about 30 minutes. Let stand 5 minutes before slicing.
