Maple-glazed pork with apples

⅓ | cup | Maple syrup |
1 | tablespoon | Spicy brown mustard |
¼ | teaspoon | Salt |
¼ | teaspoon | Pepper |
¼ | cup | Dry breadcrumbs |
4 | Pork cutlets, (4-ounce) | |
2 | teaspoons | Olive oil |
½ | cup | Apple cider |
2 | mediums | Golden Delicious apples, each cored and cut into 16 wedges |
2 | tablespoons | Chopped fresh parsley |
Directions
Combine first 4 ingredients in a small bowl; stir well with a wire whisk, and set aside. Place breadcrumbs in a large zip-top plastic bag. Add pork; seal bag, and shake to coat pork with breadcrumbs.
Heat oil in a large nonstick skillet over medium heat. Add pork, and cook 2 minutes on each side or until golden brown. Add cider and apple wedges; bring to a boil. Reduce heat, and simmer, uncovered, 10 minutes or until pork is done. Add maple syrup mixture, and cook 5 minutes or until thick and syrupy. Yield: 4 servings (serving size: 3 ounces pork and 8 apple wedges).
