How to Prepare the Pork Chops:
1. Season the pork chops on both sides with salt and pepper.
2. Heat the butter and olive oil in a 12-inch cast-iron skillet; place the pork chops in and saut until golden brown on one side, about 5 minutes.
3. Turn the chops over and continue cooking another 5 minutes or until done. Remove and keep warm.
How to Prepare the Applesauce:
1. Put the apples and water in a heavy-bottomed saucepan, cover and cook over medium heat until the apples are soft, 15-20 minutes.
2. Mash apples with a heavy spoon, leaving some lumps. Stir in the zest, honey, cinnamon and nutmeg.
