Pork and noodles in peanut sauce

| 1 | pack | MAGGI 2 Minute Noodles; Oriental Flavour |
| 2 | teaspoons | Oil |
| 400 | grams | Pork schnitzel; cut into thin |

| 2 | tablespoons | Peanut butter |
| 2 | tablespoons | Soy sauce |
| 4 | Spring onions; sliced | |
| 1 | small | Bunc spinach; washed and torn |

Directions
Bring the water to the boil.
Break the noodles and add to the water with the contents of the flavour sachet. Cook for 2 minutes.
Drain the noodles, reserving ¾ cup cooking liquid.
Set the noodles and liquid aside.
Heat the oil in a large pan.
Add the pork. Stir fry over a high heat for 2-3 minutes. Remove and set aside.
Combine the sauce mix, reserved cooking liquid, peanut butter and soy sauce.
Add to the pan. Bring to the boil, stirring constantly, then simmer for 2 minutes.
Add the noodles and pork.
Cook, stirring, for 2-3 minutes.
Add the spring onions and spinach. Cook, stirring, for a further 1 minute.
Serve with rice.
