Pork balls with peanut sauce

1teaspoonTomato paste; (1 to 2)

2teaspoonsGround coriander
1Pinches salt
¼teaspoonPepper
1largeEgg
2tablespoonsCooked rice; (or bread crumbs)
(2 to 3)
Plain flour
Oil for frying
2tablespoonsGrated carrot
1tablespoonCanola or peanut oil
1tablespoonSpanish onion; finely chopped
1teaspoonGarlic; minced or finely
; chopped
1teaspoonGinger; minced or finely
; chopped
300millilitresChicken or veal stock
1tablespoonSalt-reduced soya sauce
1tablespoonThai chilli sauce
2tablespoonsCrunchy peanut butter
2Finely sliced kaffir lime leaves; (optional)

Directions

PEANUT SAUCE

Mix all ingredients except flour and oil for frying.

Set aside for at least half an hour.

Wet the palms with cold water and roll spoonfuls of mixture about 4 cms in diameter.

Roll in flour, shake excess off and fry for 10 minutes in oil.

Peanut Sauce:

Gently sweat onion, garlic and giner in the oil for 4 or 5 minutes.

Add remaining ingredients and allow to simmer and reduce to a thick sauce.

If using as a meal, serve with rice, steamed Chinese vegetables and a topping of freshly chopped coriander leaves.
