Polenta with sausage

Measure Ingredient
1 pounds Italian Sausage Links, Mild
\N \N Cut in 1 1/2\" pieces
¼ pounds Pancetta Or Bacon -- cut up
¼ cup Onion -- chopped
¼ cup Green Pepper -- chopped
¼ cup Carrot -- chopped
1 can (16 Oz)
½ cup Dry Red Wine
1 \N Bay Leaf
\N \N Polenta (Per Favorite Recipe
\N \N For 6)
\N \N Tomatoes -- cut up

In large skillet cook sausage, pancetta or bacon, onion, green pepper, and carrot about 15 mins or till meat is browned and vegetables are tender, stirring occasionally. Drain off fat. Stir in undrained tomatoes, wine and bay leaf, ½ cup water, ¼ cup water, ¼ tsp salt, and dash pepper. Boil gently, uncovered, for 35 to 40 mins or until desired consistency, stirring occasionally. Discard bay leaf. Serve sauce over desired form of Polenta. Makes 6 servings.
