Pineapple zucchini

| 4 | quarts | Peeled, seeded, cubed or grated zucchini |
| 3 | cups | White sugar |
| ½ | cup | Lemon juice |
| 48 | ounces | Can unsweetened pineapple juice |
| 2 | eaches | 3oz boxes pineapple Jello |
Directions
Mix together the zucchini, sugar, lemon and pineapple juice. Bring to a boil and add pineapple jello. Stir to dissolve. Cook until zucchini is soft, but not mushy, about 20-30 minutes. Cool.
