Pineapple zucchini

4quartsPeeled, seeded, cubed or grated zucchini
3cupsWhite sugar
½cupLemon juice
48ouncesCan unsweetened pineapple juice
2eaches3oz boxes pineapple Jello

Directions

Mix together the zucchini, sugar, lemon and pineapple juice. Bring to a boil and add pineapple jello. Stir to dissolve. Cook until zucchini is soft, but not mushy, about 20-30 minutes. Cool.
