|1||Container low-fat cottage cheese; (16 oz.)|
|1 can||Crushed pineapple; (8 oz.) drained|
|½ teaspoon||Ground ginger|
Wash celery; trim and separate into ribs. Cut into 2½ inch lengths.
Drain cottage cheese, if necessary. Mix cottage cheese, pineapple, sugar, ginger and salt; spoon cottage cheese mixture into celery ribs, mounding slightly. Garnish with paprika and celery leaves, if desired. Yield: 2 ½ cups filling.
