Pineapple stuffed celery

Ingredients

| 1 | Stalk celery | |
| 1 | Container low-fat cottage cheese; (16 oz.) | |
| 1 | can | Crushed pineapple; (8 oz.) drained |
| 1 | teaspoon | Sugar |
| ½ | teaspoon | Ground ginger |
| ¼ | teaspoon | Salt |
Directions
Wash celery; trim and separate into ribs. Cut into 2½ inch lengths.
Drain cottage cheese, if necessary. Mix cottage cheese, pineapple, sugar, ginger and salt; spoon cottage cheese mixture into celery ribs, mounding slightly. Garnish with paprika and celery leaves, if desired. Yield: 2 ½ cups filling.
