Pineapple granita

2 | cups | Riesling wine |
1 | teaspoon | Fresh lemon juice |

Directions
Peel, core, and dice the pineapple. Place in a blender with sugar, puree, and place in a medium-size metal bowl. Add wine, lemon juice, and nutmeg and mix well. Place the bowl in the freezer until mixture is about half frozen, 4 to 6 hours, depending on your freezer.
Scrape the granita with a large metal spoon. Return to the freezer and allow it to freeze solid, about 4 hours longer. Scrape again before serving. You want the ice to be in large, flat pieces or to resemble granite. Serve in cold wine goblets garnished with a sprig of fresh mint.
