Pie dough (pate brise)

Yield: 4 servings

Measure Ingredient
¾ cup Butter (1 1/2 sticks)
¾ cup Shortening
¼ cup Granulated sugar
1 tablespoon Salt
4 cups All purpose flour
½ cup Very cold water

Cream butter, shortening, sugar, and salt until blended. Add flour all at once and cut with a fork until mix forms lumps. Add water all at once and quickly mix until dough can be gathered into a soft ball.

Form ball into "patty" approximately 1-inch thick. Wrap in plastic and refrigerate until very cold. Dough can be frozen.
