Yield: 4 servings
|1 pounds||Firm tofu; patted dry and mashed|
|1 teaspoon||Onion powder|
|1 cup||Finely chopped veggies; bell pepper, fresh mushrooms, onions, tomatoes, etc|
Place the tofu in a lightly oiled saute pan and cook over med heat for 3 mins. Add the remaining ingredients, stir well, and cook for 5-8 mins, until the veggies are thoroughly cooked and the tofu is heated thru.
