Western tofu scramble

Yield: 2 servings

Measure Ingredient
1 pack Mori-Nu silken firm tofu; crumbled (10.5 oz)
2 teaspoons Margarine
¼ cup Green onion; chopped
¾ cup Red pepper; in julienne strips
1 cup Mushrooms; sliced
1½ medium Potato
3 tablespoons Picante sauce
Turmeric

Microwave potato for 5-6 minutes or use baked potato.

Cool and slice thin.

Add crumbled tofu to melted margarine in teflon skillet. Add 2 dashes of turmeric and cook on high for 5 minutes.

Add vegetables and potato and cook 5 minutes or until vegetables are tender crisp.

Stir in picante sauce and serve.

Makes two 1⅓ cup servings.
