Western tofu scramble

Ingredients

| 1 | pack | Mori-Nu silken firm tofu; crumbled (10.5 oz) |
| 2 | teaspoons | Margarine |
| ¼ | cup | Green onion; chopped |
| ¾ | cup | Red pepper; in julienne strips |
| 1 | cup | Mushrooms; sliced |
| 1½ | medium | Potato |
| 3 | tablespoons | Picante sauce |
| Turmeric | ||
Directions
Microwave potato for 5-6 minutes or use baked potato.
Cool and slice thin.
Add crumbled tofu to melted margarine in teflon skillet. Add 2 dashes of turmeric and cook on high for 5 minutes.
Add vegetables and potato and cook 5 minutes or until vegetables are tender crisp.
Stir in picante sauce and serve.
Makes two 1⅓ cup servings.
