Peta pumpkin pie

Yield: 6 servings

Measure Ingredient
1¼ pounds Soft tofu
16 ounces Pumpkin puree
¾ cup Maple syrup
¾ cup Sugar
⅓ cup Flour
1 tablespoon Cinnamon
1 teaspoon Ginger
1 teaspoon Nutmeg
9 \N Inch unbaked pie shell

Preheat oven 400.

Blend all the ingredients for the filling in blender or food processor until smooth. Pour the mixture into unbaked pie shell. Bake 30 mins, then turn the oven to 350 degrees and bake for another 30-45 mins, or until filling is set.

Serve warm or cold.
