Peta lentil soup

Ingredients

| 1 | teaspoon | Veg oil |
| 1 | medium | Onion; sliced |
| 1 | medium | Carrot; sliced |
| 4 | cups | Hot vegetable broth |
| 1 | cup | Lentils |
| ¼ | teaspoon | Pepper |
| ¼ | teaspoon | Thyme |
| 2 | Bay leaves | |
| ;salt to taste | ||
| 1 | tablespoon | Lemon juice |
Directions
Heat the oil in a large pot over med heat, then saute the onion and carrot for about 5 mins, or until tender. Add the broth, lentils, pepper, thyme, bay leaves and salt.
