Peta lentil soup

Yield: 6 servings

Measure Ingredient
1 teaspoon Veg oil
1 medium Onion; sliced
1 medium Carrot; sliced
4 cups Hot vegetable broth
1 cup Lentils
¼ teaspoon Pepper
¼ teaspoon Thyme
2 \N Bay leaves
\N \N ;salt to taste
1 tablespoon Lemon juice

Heat the oil in a large pot over med heat, then saute the onion and carrot for about 5 mins, or until tender. Add the broth, lentils, pepper, thyme, bay leaves and salt.
