German lentil soup

Yield: 6 Servings

Measure Ingredient
1¼ cup Lentils -- washed
1 large Onion -- minced
1 tablespoon Butter
1 bunch Soup greens -- finely
\N \N Chopped
\N \N [leek,celery,carrot,and
\N \N Parsley]
1 \N Carrot -- diced
1 large Potato -- peeled & diced
½ pounds Bacon *
\N \N Salt and pepper

Soak lentils in 4-6 cups of water overnight. In large saucepan saute onion in butter til golden brown.Add lentils and the water, add greens,carrot,potato and bacon. Bring to boil. And cook for 1 hour. Season with salt and pepper after 30 mins. When almost done remove the bacon and dice. If soup is to thin mash a few of the beans to thicken. Return bacon.

Heat thru.
