Peanut butter pie .. pdpp83a

Measure Ingredient
1 x Anna Lee Little
1 each Baked pie shell
1 cup Confectioners sugar;scant C.
½ cup Peanut butter
¼ cup Cornstarch
½ cup Sugar
¼ teaspoon Salt
3 eaches Eggs; separated
2 cups Milk
2 tablespoons Butter
½ teaspoon Vanilla

EVENING SHADE

Mix powdered sugar and peanut butter together until it feels like cornmeal. Mix cornstarch, sugar, salt and egg yolks together; add milk, butter and vanilla. Cook over low heat until thickened. Pour powdered sugar and peanut mixture into pie mixture and stir just a little. Pour into baked pie shell; top with beaten egg whites. Bake at 325 until light brown for about 15 minutes.
