Peanut butter crumble cake

Yield: 1 Servings

Measure Ingredient
1¾ cup Flour
½ cup Light brown sugar
½ cup Sugar
½ teaspoon Cinnamon
½ cup Butter
1 teaspoon Baking powder
½ teaspoon Baking soda
½ teaspoon Salt
½ cup Raisins
1 tablespoon Ground ginger
¾ cup Soured milk **
1 large Egg
½ cup Chunky peanut butter

Heat oven to 350. Put flour, sugars & cinnamon in 8-9" ungreased baking pan. Stir with fork to mix well. Add butter & crumble. Set aside ¾ cup. Add baking powder, soda & salt. Stir to blend. Add milk & egg & stir until blended. Stir peanut butter into reserved crumb mixture. Sprinkle over batter. Bake 25-30 minutes. Cool in pan.

** To sour milk: 2 tsp. lemon juice in glass measure. Fill with milk to ¾ cup mark.
