Pasta amatriciana

Yield: 6 servings

Measure Ingredient
6 slices Bacon
½ cup Minced onion
1 tablespoon Garlic; minced
¼ teaspoon Red pepper flakes
2 tablespoons Tomato paste
28 ounces Canned tomatoes OR about 6 lg tomatoes
¼ cup Parmesan cheese
1 pounds Fusili pasta

Cook bacon in large skillet till crisp, about 4 min. Remove and crumble. Discard all but 1 tb drippings from pan. Add onion; cook 2 min. Add garlic and red pepper flakes; cook 15 sec. Return bacon to pan and add tomatoes and paste. Bring to boil, reduce heat, and simmer 30 min, stirring occasionally to break up tomatoes. Add salt and pepper to taste. Toss with pasta and cheese.
