Pasta a la grecque

Measure Ingredient
4 eaches Tomatoes
¾ pounds Med shrimp; cooked, shelled and deveined
½ pounds Feta cheese; crumbled
6 eaches Scallions; chopped
4 teaspoons Fresh oregano; minced
\N x Salt and freshly ground black pepper
1 pounds Spinach linguine

PREP TIME: 15 minutes, plus 1 hour to marinate COOKING TIME: 10 minutes

1. Cut tomatoes in half cross-wise. Squeeze to extract seeds.

Coarsely chop tomatoes. Combine tomatoes, shrimp, feta cheese, scallions, oregano, salt and pepper in a large bowl. Toss well and let marinate in refrigerator for 1 hour.

2. Cook linguine according to package directions. Rinse and drain well. Toss warm pasta with shrimp and feta cheese mixture and serve immediately.

PER SERVING: 290 calories; 10g fat; 31% calories from fat; 147mg cholesterol; 1.5g fiber.
