1 lb each carrots and parsnips, : peeled and cut
: into 3 x ¼ x ¼-inch : sticks
1 ts olive oil
Preheat oven to 400 degree F. Spread vegetable sticks in single layer on nonstick baking sheet. Sprinkle vegetables with olive oil. Toss until well coated.
Bake, tossing vegetables frequently, 1 to 1½ hours or until crisp and golden.
Yield: 6 serving
