½ cup | Pine nuts, toasted at 350 degrees until golden, about 15 minutes |
2 \N | Limes, Juice of, strained |
1 teaspoon | Lemon soy sauce (but any soy sauce will do) |
4 tablespoons | Corn oil |
2 teaspoons | Freshly grated ginger |
¼ teaspoon | Freshly ground black pepper. |
DRESSING
From What's Cooking with TV food reported Burt Wolf Peel and seed the papaya. Cut it into ½-inch cubes. Seed the bell pepper, remove the ribs, and cut the pepper into ½" cubes. In a small mixing bowl, combine all of the dressing ingredients and whisk. Place all of the salad ingredients in a large mixing bowl and pour the dressing over them just before serving. Toss to combine.
Yield: Made 8 servings.
Note: This tastes great the first day, but does not hold well.
