Papaya and crab salad

Yield: 1 Servings

Measure Ingredient
1 pounds Imitation crab, chopped into bite-sized pieces
1 \N Ripe papaya
1 \N Red bell pepper
1 \N Cucumber, split lengthwise and sliced into half circles
2 \N Scallions, thinly sliced
3 cups Fresh spinach, thoroughly washed, stems removed and torn into bite-sized pieces
½ cup Pine nuts, toasted at 350 degrees until golden, about 15 minutes
2 \N Limes, Juice of, strained
1 teaspoon Lemon soy sauce (but any soy sauce will do)
4 tablespoons Corn oil
2 teaspoons Freshly grated ginger
¼ teaspoon Freshly ground black pepper.

DRESSING

From What's Cooking with TV food reported Burt Wolf Peel and seed the papaya. Cut it into ½-inch cubes. Seed the bell pepper, remove the ribs, and cut the pepper into ½" cubes. In a small mixing bowl, combine all of the dressing ingredients and whisk. Place all of the salad ingredients in a large mixing bowl and pour the dressing over them just before serving. Toss to combine.

Yield: Made 8 servings.

Note: This tastes great the first day, but does not hold well.
