Orange rice with scallops

Ingredients

| 1½ | cup | Orange juice (fresh squeezed is best) |
| 1¼ | cup | Water |
| 1¼ | cup | Uncle Ben's special Blend Rice Trio |
| 1 3/16 | ounce | Julienned sun-dried tomatoes (NOT packed in oil!) |
| 1¼ | pounds | Sliced mushrooms (fresh is best, canned is ok) |
| ½ | pounds | Fresh calico scallops, rinsed & drained |
| 1 | each | Mix orange juice and water, bring to boil in stir-fry pan or saucepan. |
| Add rice and tomatoes. | ||
| 2 | eaches | Cover and simmer 5 minutes. Stir in mushrooms (if fresh). |
| 3 | eaches | Cover and simmer 10 more minutes. Stir in scallops (and |

| 4 | eaches | Cover and simmer on low, stirring occasionally until |
