Orange rice with scallops

Ingredients

cupOrange juice (fresh squeezed is best)
cupWater
cupUncle Ben's special Blend Rice Trio
1 3/16ounceJulienned sun-dried tomatoes (NOT packed in oil!)
poundsSliced mushrooms (fresh is best, canned is ok)
½poundsFresh calico scallops, rinsed & drained
1eachMix orange juice and water, bring to boil in stir-fry pan or saucepan.
Add rice and tomatoes.
2eachesCover and simmer 5 minutes. Stir in mushrooms (if fresh).
3eachesCover and simmer 10 more minutes. Stir in scallops (and
Mushrooms, if canned).
4eachesCover and simmer on low, stirring occasionally until
Rice is cooked and all liquid is absorbed.
fluid ounceWith fork before serving.
