Orange rice with scallops

1½ | cup | Orange juice (fresh squeezed is best) |
1¼ | cup | Water |
1¼ | cup | Uncle Ben's special Blend Rice Trio |
1 3/16 | ounce | Julienned sun-dried tomatoes (NOT packed in oil!) |
1¼ | pounds | Sliced mushrooms (fresh is best, canned is ok) |
½ | pounds | Fresh calico scallops, rinsed & drained |
1 | each | Mix orange juice and water, bring to boil in stir-fry pan or saucepan. |
Add rice and tomatoes. | ||
2 | eaches | Cover and simmer 5 minutes. Stir in mushrooms (if fresh). |
