4poundsOpossum, trimmed of all fat cubed
1poundsPork fat, cubed
2teaspoonsSalt
2teaspoonsWhite pepper
1teaspoonTabasco sauce
1teaspoonCrushed cumin
1teaspoonOregano
2teaspoonsSweet paprika

Directions

Prepare casings. Mix remaining ingredients, grind using the coarse disk and stuff into casings. Twist off into 3-4" links. Cook by sauteing inoil until well browned.
