Ingredients

| 5 | Feet medium hog casings | |
| 4 | pounds | Opossum, trimmed of all fat cubed |
| 1 | pounds | Pork fat, cubed |
| 2 | teaspoons | Salt |
| 2 | teaspoons | White pepper |
| 1 | teaspoon | Tabasco sauce |
| 1 | teaspoon | Crushed cumin |
| 1 | teaspoon | Oregano |
| 2 | teaspoons | Sweet paprika |
Directions
Prepare casings. Mix remaining ingredients, grind using the coarse disk and stuff into casings. Twist off into 3-4" links. Cook by sauteing inoil until well browned.
