Onion soup au gratin

| 1 | Loaf french bread | |
| 3 | tablespoons | Butter |
| 2 | cups | Thinly sliced onions |
| ¼ | cup | Flour |
| 5 | cups | BEEF STOCK |
| Salt & pepper | ||
| ¾ | cup | Grated med cheddar |
| ¾ | cup | Grated swiss |
| ¼ | cup | Grated Parmesan |
Directions
Preheat oven to 325. Cut bread into ½" thick slices. Bake 25-30 minutes or until dry & lightly browned; set aside. Melt butter in frying pan; cook onions over low heat, stirring occasionally until rich golden brown, 30 minutes. Sprinkle flour over onions & cook, stirring, 2 minutes. Add stock, salt & pepper; simmer 30 minutes.
Transfer to bowls & top with bread. Combine cheeses & sprinkle over bread. Place under broiler until bubbly & lightly browned.
