Onion and ginger marmalade for the ham

| 3 | tablespoons | Dark muscavado sugar |
| 2 | tablespoons | Ginger preserve |
| 2 | tablespoons | Olive oil |
| 2 | tablespoons | White wine vinegar |
| 1 | small | Glass of dry white wine vinegar |
| ½ | teaspoon | Chopped fresh sage |
Directions
1 Soften the onion in oil - don't brown. Add the wine vinegar, reduce for 25 minutes and stir in the preserve and sugar until dissolved and caramelised.
