Onion and ginger marmalade for the ham

3tablespoonsDark muscavado sugar
2tablespoonsGinger preserve
2tablespoonsOlive oil
2tablespoonsWhite wine vinegar
1smallGlass of dry white wine vinegar
½teaspoonChopped fresh sage

Directions

1 Soften the onion in oil - don't brown. Add the wine vinegar, reduce for 25 minutes and stir in the preserve and sugar until dissolved and caramelised.
