Onion and black-eyed pea salsa

Ingredients

1cupCooked black-eyed peas (tastes good with pinto beans in place of the peas)
1canDiced pimientos; drained
1cupDiced gree bell pepper
¼cupChopped jalapeno pepper
2Cloves garlic; minced
¼cupItalian salad dressing (a vinegar and sugar combination will work)
Salt to taste
Freshly ground black pepper

Combine in a medium bowl, cover and marinate in refrigerator overnight.
