Olive oil salad dressing

Yield: 6 servings

Measure Ingredient
90 millilitres White wine vinegar; (3fl oz)
175 millilitres Greek olive oil; (6fl oz)
2 tablespoons Fresh oregano; finely chopped
Salt and freshly ground black pepper

Place the vinegar in a liquidiser and with the motor running gradually add the olive oil.

Add the oregano, salt and pepper and blend until the dressing takes on a creamy appearance. Serve immediately or blend again just before serving.
