|90 millilitres||White wine vinegar; (3fl oz)|
|175 millilitres||Greek olive oil; (6fl oz)|
|2 tablespoons||Fresh oregano; finely chopped|
|Salt and freshly ground black pepper|
Place the vinegar in a liquidiser and with the motor running gradually add the olive oil.
Add the oregano, salt and pepper and blend until the dressing takes on a creamy appearance. Serve immediately or blend again just before serving.
