While scanning throughTaste of Home's Quick Cooking recipies that they sent to me, I found the below quick recipes. I modified both of them to suit my taste and tried both last night. It tooke me about 30 minutes to prepare and serve both. They complimented each other and were so tasty, I want to share them.
Saute garlic in a medium skillet until tender. Stir in finely chopped pulled pork or brisket, basil and pepper. Cook over medium heat until heated through.
Meanwhile, spread butter over one side of each tortilla. Place tortillas, buttered side down, on a griddle. Sprinkle each with a ½ cup of cheese.
spread ½ cup of smoked meat mixture over ½ of each tortilla and fold over and cook on low for one to two minutes on each side.
Cut into wedges; serve with salsa or quacamole.
YIELD: 4 SERVINGS
