Mediterranean white bean soup

Ingredients

| 7 | cups | Water | 
| 1 | Onion, chopped | |
| 6 | To 7 cloves minced garlic | |
| 2 | Potatoes, peeled and chopped | |
| 8 | ounces | Can water-packed artichokes drained | 
| 4 | ounces | Can sliced black olives, drained | 
| 8 | ounces | Can tomato sauce | 
| 1 | teaspoon | Italian herb mix | 
Directions
place the beans in a large pot with the water.  cover and cook over medium heat for 1 hour.  add the onion and garlic and continue to cook until the beans are tender, 1 to 1½ hours. add the potatoes and cook another 20 min. add the remaining ingredients and cook for about 10 more min.
note: if you soak the beans overnight, the total cooking time may be reduced by 30 min.
