Yield: 4 Servings
|12||Red new potatoes; cooked as noted|
|¼ cup||Balsamic vinegar|
|¼ cup||Extra virgin olive oil|
|2 bunches||Green onions; thinly sliced, white and green parts of|
|1 tablespoon||Fresh dill; chopped|
|2||Dill pickles; finely chopped|
|1 teaspoon||Cracked black pepper|
Quarter the cooked, chilled new potatoes. Dress with vinegar, oil, herbs, onions, pickles and black pepper. Stir until completely mixed. Chill and serve.
Notes: Simmer the small potatoes whole until just barely tender; chill.
