New red potato salad (gardenburger)

Ingredients

12Red new potatoes; cooked as noted
¼cupBalsamic vinegar
¼cupExtra virgin olive oil
2bunchesGreen onions; thinly sliced, white and green parts of
1tablespoonFresh dill; chopped
2Dill pickles; finely chopped
1teaspoonCracked black pepper

Directions

Quarter the cooked, chilled new potatoes. Dress with vinegar, oil, herbs, onions, pickles and black pepper. Stir until completely mixed. Chill and serve.

Notes: Simmer the small potatoes whole until just barely tender; chill.
