New red potato salad (gardenburger)

Yield: 4 Servings

Measure Ingredient
12 Red new potatoes; cooked as noted
¼ cup Balsamic vinegar
¼ cup Extra virgin olive oil
2 bunches Green onions; thinly sliced, white and green parts of
1 tablespoon Fresh dill; chopped
2 Dill pickles; finely chopped
1 teaspoon Cracked black pepper

Quarter the cooked, chilled new potatoes. Dress with vinegar, oil, herbs, onions, pickles and black pepper. Stir until completely mixed. Chill and serve.

Notes: Simmer the small potatoes whole until just barely tender; chill.
