New potato, cashew nut and orange salad

| 4 | larges | Tomatoes; skinned and sliced |
| 1 | 120 g pack watercress | |
| 1 | teaspoon | White wine vinegar |
| 1 | teaspoon | French mustard |
| 2 | tablespoons | Orange juice |
| Grated rind of 1 orange | ||
| 100 | millilitres | Olive oil; (31/2fl oz) |
| Salt and freshly ground black pepper | ||
Directions
FOR THE SALAD
FOR THE ORANGE DRESSING
Combine the salad ingredients.
Place all the ingredients for the dressing in a liquidizer and blend until creamy.
Just before serving and while the potatoes are still warm toss the salad in the dressing.
