New orleans shrimp

Ingredients

4cupsWater
1Clove garlic, crushed Salt and pepper to taste
1smallBay leaf
4Stalks celery, finely chopped
1poundsMedium shrimp, cleaned
4Scallions, finely chopped
2tablespoonsOlive oil
¼cupLemon or lime juice
¼cupChili sauce
¼cupKetchup
1tablespoonFreshly grated horseradish
1tablespoonPrepared mustard
1teaspoonPaprika Pinch cayenne pepper

Directions

Bring water to boil. Add garlic, salt, pepper, bay leaf, celery, shrimp, and half the scallions. Cover and simmer 5 minutes. Drain; remove the bay leaf. Place shrimp mixture in a bowl and let cool.

Combine remaining ingredients in a seperate bowl; mix well. Pour over shrimp and mix until well blended. Cover and refrigerate overnight.

Serve shrimp and sauce in glass bowl placed in bowl of cracked ice.

Serve with toothpicks.
