Nan's lemon curd cheese

| ½ | cup | Butter |
| 2 | cups | Sugar |
| 3 | larges | Eggs; beaten |
| 2 | Lemons; juice only | |
Directions
Melt butter and sugar in double boiler. Add eggs and juice and cook, stirring until thickened. Put in jars and cool. Keeps for months in fridge.
