Nam chim satay (satay peanut sauce)

3Garlic cloves -- crushed
2tablespoonsOil -- vegetable
1cupWater
2Chilies, red, hot -- chop
Fine
2tablespoonsLime juice -- fresh
1teaspoonSalt
2tablespoonsSugar -- brown
½teaspoonShrimp paste (Kapi)
1cupPeanut butter -- smooth
1canCoconut milk (14oz)

Directions

In a small pan, fry the garlic in the oil until golden brown. Add water, chilies, lime juice, salt, brown sugar, shrimp paste, peanut butter and coconut milk. Stir until well blended. Summer for 10 minutes, stirring frequently. Use with chicken, beef or pork satays.
