Mushroom dressing

Ingredients

1.00cupsliced assorted fresh wild mushroom; s
1(chanterelles; shiitake, oyster, black
1trumpets)
1.00egg; (optional)
4.00tablespoondry sherry
2.00tablespoonfinely-chopped shallots
2.00tablespoonfinely-chopped garlic
2.00tablespoonfresh lemon juice
1.00teaspoonsalt
1freshly-ground black pepper

Directions

Heat ¼ cup oil in a medium skillet and saute mushrooms 3 minutes.

Transfer mixture to food processor and add egg (if using). Process 30 seconds and add remaining ingredients and 3 turns pepper. Process 15 seconds and with machine running, add remaining oil until thoroughly blended.
