Mushroom dressing

Measure Ingredient
¾ cup olive oil
1.00 cup sliced assorted fresh wild mushroom; s
1 (chanterelles; shiitake, oyster, black
1 trumpets)
1.00 egg; (optional)
4.00 tablespoon dry sherry
2.00 tablespoon finely-chopped shallots
2.00 tablespoon finely-chopped garlic
2.00 tablespoon fresh lemon juice
1.00 teaspoon salt
1 freshly-ground black pepper

Heat ¼ cup oil in a medium skillet and saute mushrooms 3 minutes.

Transfer mixture to food processor and add egg (if using). Process 30 seconds and add remaining ingredients and 3 turns pepper. Process 15 seconds and with machine running, add remaining oil until thoroughly blended.
