Muffins, queen of

Yield: 12 Servings

Measure Ingredient
¼ cup Butter, very soft
½ cup Sugar, heaping
½ cup Egg Beaters 99% egg substitute
1½ cup Flour
2½ teaspoon Baking powder
½ teaspoon Salt
⅔ cup Milk, 1% lowfat

Cream butter and sugar. Add Egg Beaters. Sift dry ingredients together and add alternately with milk. Stir gently. DO NOT BEAT! Add BLUEBERRIES, cranberries or fruit of choice.

Bake in greased muffin rings at 400 for about 20 minutes.
