Recipe by: Butter Buster -The Cookbook by Pam Mycoskie In an 8" skillet, pour Egg Beaters, or substitute. Cover tightly; cook over low heat 10 min or until just set. Remove from heat; let stand, covered for 10 min. Remove from skillet and cool completely. Chop and use in your favorite egg salad recipe or sprinkle over salads or casseroles.
