Mixed-fruit compote in ginger syrup - bon appetit

Ingredients

12Quarter-size slices peeled fresh ginger
8Thin slices peeled seeded cantaloupe
4Strawberries, huued, halved
2Apricots or plums, pitted, halved
1Star fruit (carambola), sliced OR
1cupSliced peeled quartered pineapple
1Kiwifruit, peeled, sliced
1tablespoonFresh lime juice

Directions

Combine water, sugar and ginger in heavy medium saucepan. Bring to boil, stirring until sugar dissolves. Boil until liquid is reduced to 1 C, about 15 minutes. Cool to room temperature.

Arrange all fruit in shallow bowl. Sprinkle with lime juice. Strain syrup over fruit. Remove 3 ginger slices from strainer; cut into matchstick-size strips. Sprinkle strips over fruit. Cover and chili at least 3 hours or up to 8 hours.

Arrange compote on plates; spoon some syrup over and serve cold.
