Mixed bean vegetable soup

| 2 | cups | Mixed dried beans, washed and drained | 
| 8 | cups | Water | 
| 1 | Clove garlic, minced | |
| 1 | large | Onion, chopped | 
| 2 | tablespoons | Lemon juice | 
| 2 | tablespoons | Honey | 
| 2 | Bay leaves | |
| 1 | can | (24-oz) vegetable or tomato juice | 
| 1 | can | (16-oz) tomatoes, undrained | 
| 2 | cups | Sliced carrots | 
| 1½ | cup | Shredded cabbage | 
| 1 | cup | Chopped celery | 
| ¼ | cup | Chopped green bell pepper | 
| Beef bouillon to taste | ||
| Salt and pepper | ||
Directions
(From Spiral Co-op Natural Foods, Hastings, MN) In large container, cover beans with 3 quarts water. Soak overnight (minimum 12 hours). Rinse and combine in large soup pot with 8 cups water, garlic, lemon juice, honey and bay leaves. Simmer, covered, for 2 hours. 
Add remaining ingredients and simmer, covered, for ½ to 1 hour, depending on size of vegetables. Remove and discard bay leaves before serving. 
Substitutions on vegetables is encouraged.
