Million dollar meatballs

Yield: 4 Servings

Measure Ingredient
2 \N Eggs; lightly beaten
½ cup Soft bread crumbs
¼ cup Grated Parmesan cheese
1 pack Frozen chopped spinach; thawed
1 pounds Ground beef
3 tablespoons Shortening
1¼ cup Water
2 tablespoons Lemon juice
1 \N Envelope brown gravy mix -or
1 can Cream of mushroom soup

Combine eggs, bread crumbs & cheese in mixing bowl. Drain spinach well; add with beef to egg mixture & mix lightly. Shape into meatballs. Brown in fat in large skillet; pour off excess fat. Stir in 1-¼ cups water, lemon juice & contents of gravy mix (or can of soup). Simmer uncovered 15-20 minutes or until meatballs are cooked.
