Mighty nice shrimp cheese ball

Ingredients

1poundsUnpeeled medium-size fresh shrimp
1packCream cheese, softened (8-oz.)
1tablespoonPrepared horseradish
1tablespoonLemon juice
2teaspoonsGrated onion
1teaspoonLiqid smoke
¼cupChopped pecans, toasted
2tablespoonsChopped fresh parsley

Directions

Bring water to a boil; add shrimp, and cook 3 to 5 minutes or until shrimp turn pink. Drain well; rinse with cold water. Chill. Peel, devein, and chop shrimp.

Combine shrimp, cream cheese, and next 4 ingredients in a bowl; stir well. Cover and chill 1 hour. Shape shrimp mixture into a ball; cover and chill thoroughly.

Combine chopped pecans and parsley; roll cheese ball in pecan mixture.

Serve with assorted crackers.

Yield: 1 (4-inch) cheese ball.
