Microwave polenta

Yield: 4 servings

Measure Ingredient
1 cup Cornmeal
½ teaspoon Salt
1 tablespoon Olive oil
Q water

Mix all ingredients in a 3-quart microwave-safe dish. Cover and cook on high power for 5 minutes. Stir and cook on high power until thickened, about 5 minutes longer.

Makes 4 servings.
