Micro-poached chicken breasts

Yield: 3 cups

Measure Ingredient
1 pounds Boneless chicken breast halves
½ cup White wine or water
\N \N White pepper

Rinse chicken and place around sides of an 8" square glass dish. Pour wine over chicken and sprinkle with pepper. Cover with vented plastic wrap and microwave on high 6-7 minutes, or until juice from chicken is no longer pink. Let stand, covered. 30 minutes. Drain liquid and let stand until cool enough to handle. Coarsely chop. Use in any recipe calling for cooked chicken meat. Yields 2½ cups Submitted By MICHAEL ORCHEKOWSKI On 11-25-94
