Mexican potatoes

Ingredients

QuantityIngredient
1poundsPotatoes; mashed, coarsely (4 large)
¼cupOnion; diced
1cupTomatoes; diced
½teaspoonFresh ground black pepper; To taste
½teaspoonHot chili pepper; to taste (1/2 to 1)
Salt to taste
1Clove garlic; pressed or minced

Directions

Fry all ingredients, except potatoes, together for 5 minutes or until they are clear and tender. You may add oil or butter to your taste. Add potatoes, fry until heated through. Garnish with shredded cheese.
