Yield: 4 servings
|1 pounds||Potatoes; mashed, coarsely (4 large)|
|¼ cup||Onion; diced|
|1 cup||Tomatoes; diced|
|½ teaspoon||Fresh ground black pepper; To taste|
|½ teaspoon||Hot chili pepper; to taste (1/2 to 1)|
|\N \N||Salt to taste|
|1 \N||Clove garlic; pressed or minced|
Fry all ingredients, except potatoes, together for 5 minutes or until they are clear and tender. You may add oil or butter to your taste. Add potatoes, fry until heated through. Garnish with shredded cheese.
