Mexican potatoes

Ingredients

| 1 | pounds | Potatoes; mashed, coarsely (4 large) | 
| ¼ | cup | Onion; diced | 
| 1 | cup | Tomatoes; diced | 
| ½ | teaspoon | Fresh ground black pepper; To taste | 
| ½ | teaspoon | Hot chili pepper; to taste (1/2 to 1) | 
| Salt to taste | ||
| 1 | Clove garlic; pressed or minced | |
Directions
Fry all ingredients, except potatoes, together for 5 minutes or until they are clear and tender. You may add oil or butter to your taste. Add potatoes, fry until heated through. Garnish with shredded cheese.
