Mexican potatoes

Yield: 4 servings

Measure Ingredient
1 pounds Potatoes; mashed, coarsely (4 large)
¼ cup Onion; diced
1 cup Tomatoes; diced
½ teaspoon Fresh ground black pepper; To taste
½ teaspoon Hot chili pepper; to taste (1/2 to 1)
\N \N Salt to taste
1 \N Clove garlic; pressed or minced

Fry all ingredients, except potatoes, together for 5 minutes or until they are clear and tender. You may add oil or butter to your taste. Add potatoes, fry until heated through. Garnish with shredded cheese.
