Mashed spinach, indian style

Ingredients

3cupsPacked spinach
1tablespoonGhee
2mediumsOnions, diced
2eachesGarlic cloves, sliced
1teaspoonGrated ginger
1teaspoonCayenne
2mediumsTomatoes, chopped
Salt
1teaspoonGarmam masala

Directions

Wash & drain spinach. Bring to a boil in a pan with a little water, remove from heat & drain very well. Chop spinach.

Heat ghee in a skillet & saute onion & garlic until they are golden.

Add ginger, cayenne & tomatoes. Stir over a moderate heat for 3 minutes. Mix in the chopped spinach. Add salt & cook, stirring, for 5 minutes. Sprinkle with garam masala & continue to stir-fry for 3 to 5 minutes.
