Mary's buttermilk biscuits

Yield: 18 Servings

Measure Ingredient
2 cups All-purpose flour
2½ teaspoon Baking powder
½ teaspoon Baking soda
1 dash Salt
1 tablespoon Sugar
½ cup Butter
¾ cup Buttermilk
\N \N Melted butter; optional
\N \N All-purpose flour; optional

Mix flour, baking powder, baking soda, salt, and sugar in a mixing bowl.

Cut in very cold butter with pastry blender until mixture resembles coarse crumbs. Add buttermilk. With a knife mix in the buttermilk until the dough forms into a ball. Turn out onto a lightly floured surface. Knead a few times to make a soft dough. Don't over knead or the biscuits will be hard and dry. Roll or press the dough out. Should be about1/2" to ¾" thick.

Cut out with a biscuit cutter, but don't twist the cutter while cutting, as it will make the biscuits tough. Place close together on an ungreased baking sheet. If you like crispy tops, brush the tops with a little melted butter. Bake at 400 degrees until golden about 10-15 minutes, depending on how thick they were cut. When the biscuits come out of the oven dust with flour, if you like.
